Bring out your creative side – presentation is everything!

Here’s a flexible and festive dish which can be used whenever. This recipe is just an example – use whichever ingredients you fancy and if you can’t be bothered to cut everything into neat cubes, you can always mash it all up and cover the whole in mayo (this is how you’ll often find it in tubs in Dutch supermarkets). Grated carrot, small peas, and finely chopped fresh onion are also good ingredients to mix in. Let you creative juices flow and turn it into a party piece by decorating it with lots of colour. I like to surround mine with stuffed eggs and small gherkins wrapped in ham, but simple egg slices work well too. Use good quality vinegar so the dish doesn’t become too sharp – personally I favour cider vinegar, especially if you use apple in your salad. I find it best when made a little in advance so the flavours have time to mix.

Ingredients

  • 4 boiled potatoes
  • 1 apple (sweet)
  • 100 gr cooked meat (pork, veal, ham, whatever your preference is)
  • 3 gherkins
  • 2 tablespoons silverskin (pickled) onions
  • 4 tablespoons mayonnaise
  • 1 tablespoon cider vinegar
  • salt & pepper
For the decoration:
  • lettuce leaves
  • hard boiled egg(s)
  • tomato
 

Preparation

  1. Dice the potato into small cubes
  2. Peel & core the apple & dice into small cubes
  3. Cut meat and gherkins into small chunks, and quarter the silverskin onions
  4. Mix all ingredients along with the mayonnaise and vinegar
  5. Season with salt and pepper
  6. Serve on a platter covered with lettuce leaves and decorate with boiled egg slices and tomato
  7. Excellent as part of a party buffet, or simply serve as summer salad with crusty bread
